Slow-Roasted Lamb Shoulder With Pomegranate Glaze (True New Year Dish)

Numbers 28:11-16 (DDSV Scripture Portion):
11 “In the first month, on the first day of the month, you will have a consecrated gathering; you will not do ordinary work.
12 You will offer to Yaw-huw-waw a burnt offering of two young bulls, one ram, and seven male lambs, one year old without blemish.
13 Their grain offerings will be fine flour mixed with oil — three-tenths of an ephah for each bull, two-tenths for the ram,
14 and one-tenth for each lamb, for seven lambs total.
15 You will also offer one male goat as a sin offering to make atonement for yourselves.
16 These offerings are in addition to the continual burnt offering, their grain offerings, and their drink offerings.

Instructions

1. Prepare the Lamb

  1. Preheat oven to 300°F (150°C).

  2. Rub lamb shoulder with olive oil, salt, pepper, paprika, coriander, and cumin.

  3. Place onions, garlic, and rosemary in a roasting pan and set the lamb on top.

  4. Add water/broth to the bottom of the pan.

2. Slow Roast

  1. Cover tightly with foil.

  2. Roast 3.5–4 hours, until the meat is tender and nearly falling off the bone.

  3. Remove foil for the last 30 minutes to deepen browning.

3. Make the Glaze

  1. In a small saucepan, simmer pomegranate juice, honey, lemon juice, and zest.

  2. Reduce until syrupy (10–15 minutes).

4. Finish the Lamb

  1. Brush glaze generously over the lamb.

  2. Return to oven at 425°F (220°C) for 10–12 minutes to caramelize.

  3. Let rest 10 minutes before slicing.
